MUSHROOM-SHAPED GINGERBREAD COOKIES
I adore lebkuchen, though I can never pronounce the name. These popular German gingerbread-type cookies are usually seen in shops around Christmas time. I thought it would be fun to make them into mushroom shapes, which would be great for a woodland–themed party. I was going to put them on top of a Black Forest gateau but they were so good that we ate them before I had the chance to make the cake.
Mushroom-shaped gingerbread cookies
Makes 12 cookies Difficulty rating
For the cookies
1 whole egg plus 1 egg yolk
220 g (7¾ oz/1 cup) caster (superfine) sugar
200 g (7 oz/1½ cups) plain (all-purpose) flour
125 g (4½ oz/1½ cups) almond meal
1½ tablespoons unsweetened cocoa powder
3 teaspoons ground cinnamon
1½ teaspoons ground cardamom
1½ teaspoons ground ginger
¾ teaspoon ground cloves
¾ teaspoon ground nutmeg
4 tablespoons mixed peel
To decorate
400 g (14 oz/3¼ cups) icing (confectioners’) sugar
100 g (3½ oz/⅔ cup) dark chocolate, chopped
Equipment
2 baking trays
Wire rack
Paintbrush
Prep time: 10 minutes, plus 20 minutes chilling
Baking time: 15–20 minutes
Decorating time: 30 minutes
